Cut the leek into slices and let it simmer in a pan with a little oil.
Once wilted, add the zucchini cut into slices or chunks.
When the leeks and courgettes are browned, add salt and pepper and cover with the vegetable broth.
Cook on high heat for a few minutes, add the thyme and then let it continue in the medium / low heat cooking by covering with a lid for about 20 minutes.
Towards half cooked add a pinch of ginger. The amount of ginger is at the discretion of your taste!
While cooked vegetables cut into cubes the sandwich bread or stale bread and make it up in a pan with a little oil until it becomes crispy.
After the 20 minutes transfer the vegetables with their broth in the glass of the hand blender. Please do not use the hand blender directly in the pot, you risk damaging them.
Serve hot or warm with crunchy croutons and a drizzle of raw oil.
